SEOUL, SOUTH KOREA.- Hundreds of people make kimchi, fermented and spicy cabbage, at a charity event in Seoul Square on Saturday, November 2, 2019. Kimchi is a fermented preparation of Korean origin that has gained a lot of popularity in recent years thanks to being considered, like any fermented product of plant origin, benign for health. It is made from different vegetables seasoned with different spices and whose most widespread recipe uses Chinese cabbage as a basic ingredient, there are also other recipes in which ingredients such as radishes or cucumbers are used, among other vegetables, which are commonly accompanied by pepper or ground red chili, garlic, onions or other combinations according to different geographical areas, but present in the daily lives of Koreans, both from the north and from the south.
